Cover a cookie sheet with parchment paper and set aside. Set up a double boiler over medium heat. Bring 1-2 inches of water to a boil.
Add the white chocolate chips and vegetable oil to the top. Stir frequently until the white chocolate is completely melted. Turn off heat.
Place several blueberries into the melted white chocolate and cover them completely. Remove using a spoon and place on the parchment paper. Make sure they are not touching each other on the paper. Repeat until all blueberries are covered in white chocolate. Refrigerate for 30 minutes before serving.
