Ingredients

  • 45 ounces black beans drained but not rinsed
  • 1 cup chopped onions
  • 2 cups chicken broth
  • 1 cup sliced celery
  • 1 cup chopped red bell pepper
  • 4 cloves garlic minced
  • 1 ½ teaspoons oregano
  • 1 teaspoon cumin
  • ½ teaspoon ground red pepper
  • 7 ounces cooked turkey sausage sliced thin

Instructions

  • Combine all ingredients except for the turkey sausage in a slow cooker. Stir. Cover and cook on low for 6 hours.
  • Remove 2 cups of mixture and put in a blender until smooth. Return to stew.
  • Add sausage and stir. Cook for an additional 30 minutes on low.
