- 45 ounces black beans drained but not rinsed
- 1 cup chopped onions
- 2 cups chicken broth
- 1 cup sliced celery
- 1 cup chopped red bell pepper
- 4 cloves garlic minced
- 1 ½ teaspoons oregano
- 1 teaspoon cumin
- ½ teaspoon ground red pepper
- 7 ounces cooked turkey sausage sliced thin
Combine all ingredients except for the turkey sausage in a slow cooker. Stir. Cover and cook on low for 6 hours.
Remove 2 cups of mixture and put in a blender until smooth. Return to stew.
Add sausage and stir. Cook for an additional 30 minutes on low.
