Ingredients

  • 29 ounces black beans rinsed and drained
  • 2 cups vegetable broth
  • 4 tbsp lime juice
  • 2 garlic cloves minced
  • ½ cup diced fresh cilantro
  • 1 teaspoon taco seasoning
  • ½ teaspoon cumin
  • salt to taste

Instructions

  • Combine the drained black beans, broth, lime juice, minced garlic, diced cilantro, taco seasoning, and cumin in a medium pot. Bring to a boil over medium heat. Reduce heat and simmer for 20 minutes, stirring occasionally.
  • When the liquid has reduced y half, and there is a thick gravy, season to taste with salt. Serve hot.
