Jalapeno Tuna Stuffed Tomatoes

This jalapeño tuna stuffed tomato recipe is perfect for picnics and lunch in the summer! It's super easy to make and packed with flavor.

Ingredients

  • 4 medium tomatoes
  • 10 ounces canned tuna
  • 1 jalapeno seeds removed, diced into small pieces
  • ½ cup low-fat mayonnaise
  • ½ cup carrot diced
  • ½ cup celery diced
  • ¼ cup cilantro roughly chopped
  • 2 teaspoon kosher salt

Instructions

  • Remove the top of the tomato and set aside. Use a paring knife and a spoon to carefully remove the insides of the tomato (discard or save for another recipe.)
  • Drain the oil from the tuna cans. Put the tuna and the remaining ingredients in a medium bowl and mix well.
  • Use a spoon to fill the tomatoes with tuna salad. Put the set side tomato tops on top of the tuna salad when serving.
