Ham Jalapeno Green Onion Quesadilla

If you have a ton of leftover ham after Easter or Christmas dinner, make this ham jalapeno green onion quesadilla.

Ingredients

  • 1 teaspoon extra virgin olive oil
  • 2 extra large tortillas
  • 1 cup cheddar cheese shredded
  • 4 tablespoons green onions diced
  • 1 tablespoon jalapeños finely diced
  • 1 cup ham cooked and diced into ¼ inch cubes

Garnish

  • ½ cup sour cream
  • 1 teaspoon hot sauce
  • extra shredded cheese
  • extra diced green onions
  • jalapeno slices

Instructions

  • Heat the olive oil in a grill pan or skillet on medium heat. On one quesadilla, spread out half the shredded cheese. Then sprinkle the green onions, jalapenos and ham evenly over the cheese. Sprinkle the remaining cheese over the ham. Cover with the other tortilla.
  • When the pan is hot enough (splash some water on the pan and if it sizzles its hot), place the uncooked quesadilla on it. Cook until the bottom is crispy. Then flip, and cook for an additional 3-4 minutes.
  • Slide out of pan onto a plate.

Garnish

  • In a small bowl, mix the sour cream and hot sauce together with a fork. Drizzle the sour cream mixture on top of the quesadilla. Reserve the leftover for dipping. Sprinkle the extra cheese, green onions and jalapeno slices on top of the quesadilla. Cut into 4 pieces using a pizza cutter or sharp knife.
