chicken stock
or broth

white onion
finely diced

garlic
1 head of garlic finely minced

white vinegar

butter

flour

extra virgin olive oil

teaspoon
kosher salt
black pepper to taste

Instructions
Heat the oil and butter in a medium soup pan on low.
Add the onion and fresh garlic to the pan when the butter has melted. Cook the onion and garlic for 20 minutes until soft (but not brown.)
Add the flour and stir. Cook for 2 minutes on medium heat, then add the chicken stock, water, vinegar, and salt. Stir well.
Bring to a boil, then simmer for 30 minutes.
Serve hot.
Notes
To make this simple soup vegan, substitute the chicken stock with vegetable broth.
