Garlic Soup

Ingredients

  • 4 cups chicken stock or broth
  • 2 cups water
  • 1 cup white onion finely diced
  • 5 tablespoons garlic 1 head of garlic finely minced
  • 3 tablespoons white vinegar
  • 1 tablespoon butter
  • 2 tablespoons flour
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon kosher salt
  • black pepper to taste

Instructions

  • Heat the oil and butter in a medium soup pan on low.
  • Add the onion and fresh garlic to the pan when the butter has melted. Cook the onion and garlic for 20 minutes until soft (but not brown.)
  • Add the flour and stir. Cook for 2 minutes on medium heat, then add the chicken stock, water, vinegar, and salt. Stir well.
  • Bring to a boil, then simmer for 30 minutes.
  • Serve hot.

Notes

To make this simple soup vegan, substitute the chicken stock with vegetable broth.
