Easy Breakfast Quesadilla

This easy breakfast quesadilla is a great way to start your day - full of eggs, black beans and cheese! Only 10 minutes to cook.

Ingredients

  • 1 tablespoon cooking oil
  • 1 tortilla burrito-sized
  • ½ cup cheddar cheese shredded
  • 2 eggs scrambled
  • ½ cup black beans
  • 2 tablespoons salsa

Instructions

  • Heat oil in a skillet over medium heat. Add tortilla and top with cheese, putting the cheese on one half only. Then top the cheese with egg, black beans and salsa. When the cheese has melted, 8-10 minutes, fold the quesadilla in half. Transfer to a cutting board and cut into wedges.
