Brown Butter Alfredo with Roasted Red Peppers and Sausage

This brown butter alfredo pasta with roasted red peppers and sausage is perfect for Sunday dinner and a great way to use up leftover grilled sausage.

Ingredients

  • 1 pound pasta
  • ½ cup salted butter
  • 1 cup heavy cream
  • 2 cloves minced garlic
  • 1 ½ cup grated Parmesan cheese
  • salt and pepper to taste
  • 2 cups Italian sausage cooked and sliced
  • 1 cup sliced roasted red pepper
  • 1 tablespoon minced fresh basil

Instructions

  • Bring a large pot of water to boil. Cook the pasta according to package instructions to al dente.
  • Melt the butter in the skillet over medium heat.
  • Once the butter turns a medium brown color (and has a nutty smell), add the cream and garlic. Stir until combined.
  • Add the cheese, mix until incorporated and smooth.
  • Add the salt and pepper to taste.
  • Toss with the cooked pasta, sausage, red pepper and basil.
