Jalapeno Tuna Stuffed Tomato Recipe
This jalapeño tuna stuffed tomato recipe is perfect for summer picnics or for an easy lunch! It’s flavorful and easy to make!
First you need to cut and core your tomatoes. If you’re taking these stuffed tomatoes “to-go”, this can be done ahead of time! Cut off the top carefully, then use a pairing knife and a spoon to remove the tomato insides. Up to you whether you discard the insides or save them.
Then mix up your tuna salad. Throw all of the tuna salad ingredients in a bowl and then stuff it in your tomatoes. I wish I could say it was more complicated to get the end result, but it’s not.

Ingredients
- 4 medium tomatoes
- 10 ounces canned tuna
- 1 jalapeno seeds removed, diced into small pieces
- ½ cup low-fat mayonnaise
- ½ cup carrot diced
- ½ cup celery diced
- ¼ cup cilantro roughly chopped
- 2 teaspoon kosher salt
Instructions
- Remove the top of the tomato and set aside. Use a paring knife and a spoon to carefully remove the insides of the tomato (discard or save for another recipe.)
- Drain the oil from the tuna cans. Put the tuna and the remaining ingredients in a medium bowl and mix well.
- Use a spoon to fill the tomatoes with tuna salad. Put the set side tomato tops on top of the tuna salad when serving.
